The Instant Tampered Rice With Lemon

This is rice dish from south part of India. This is a very quick and delicious dish with the freshness of lemon juice. If you have left over cooked rice in fridge, this is an excellent option for lunch to go, for work or for kids as a school lunch which you can toss together in a hurry. This is a very light but nutritious low fat option.

 

Serves 2

Ingredients:

3 cups of cooked rice

1tsp. roasted peanuts

1tsp. roasted cashew-nuts (optional)

1tbsp. lemon juice

¼ tsp. Turmeric powder

Salt to taste

For tampering:

1 tbsp. of oil

A pinch of asafoetida

1 dried red chilli

1/2 small slit green chilli (seeds removed)

1 tbsp. of split chick pea (chana dal)

1/4 tsp. of fenugreek seeds

1/2 tsp. of mustard seeds

½ tsp. cumin seeds

1tsp. minced fresh ginger

1 sprig curry leaves

For garnishing:

1tbsp. chopped cilantro

1 tbsp. Of scraped coconut

Ingredients for lemon Rice

Method:

I use left over rice from fridge. You can use fresh cooked rice. If you are using fresh cooked rice, let the rice cool down before use.

  • Wash the split chick peas, drain and keep aside.
  • Mix the lemon juice and salt with rice and keep aside.
  • Heat oil in a skillet; add mustard seeds, fenugreek seeds, cumin seeds, dried whole red chilli, when the mustard seeds begin to splutter add asafoetida, green chilli, split chick pea.
  • Stir until the split chick peas, change colour to light brown.
  • Add turmeric powder, minced ginger and curry leaves and add the rice and nuts.
  • Toss them to mix together.
  • Garnish with coconut and cilantro leave

  • Serve hot with Yogurt salad.

Note: Coconut and cilantro are optional. They are used for added flavour.

Nuts are optional if you have allergy, otherwise they are very good for crunchy taste and flavour.

If you don’t eat spice that skip the green chilli, but again it’s really a complements to the dish. But   if you discard the seeds they won’t be hot anymore.

You can use any rice but  I have used brown rice to make it low fat.

If you want you can use  finely chopped aspargus and jucccini  to make the dish more nutritious and fiberous.
