High Protein Red Lentil Soup

In lentils approximately 26% of their calories come from protein, lentils have the third-highest level of protein, by weight.

Lentils are a good vegetable source of iron. This makes them useful for preventing iron deficiency.

1 cup cooked Red Lentil has 17.98 g PROTEIN , .4 g FAT and 13.6 g

Ingredients:

Red lentil I cup ( 125 gm.) washed and soaked

Rinsed and soaked red lentil

3 cup Water

1/4 tsp. turmeric powder

1/2 tsp. Salt (as your taste)

1/4 tsp. sugar

2 Green chillies (as your taste)

1 tsp. Cilantro, chopped

3 tsp.  Butter or olive oil

1 tsp. minced ginger

1 Onion, finely sliced

1 small tomato finely chopped

Method:

Pick through the lentils if in case any rocks, stones are there. Then rinse them 3-4 times under cold water and soak for 30 -60 min.

Soaking saves the cooking time and heat energy. After soaking lentils expands just double in size and enhance the taste as well.

Bring lentils and water to a boil in large saucepan. Remove any scum that forms.

Add oil or butter, turmeric, ginger, onion, chilli, tomatoes, salt and sugar. Lower heat and partially cover.

Stir occasionally to blend everything properly.

Simmer for about 35 minutes.

Add chopped cilantro and cook 5 min more.

Remove from heat. Serve hot with rice and salad greens.
