This bananaoat pancake is with high protein, probiotic and minerals benefit.
I concocted these healthy mouth-watering pancakes using a traditional Indian recipe, which my mom used to make when the bananas used to get black colour and over ripe. We love them topped with dots of butter, scraped coconut and or dry fruits for breakfast, supper or even just snacking. They’re delicious drizzled with maple syrup or honey too if you want. I didn’t use because I wanted to make it sugar free and low fat.
Serve: 4 pancakes or more depends upon the size
Ingredients:
- 1 tbsp. semolina (cream of wheat)
- 3/4 cup quick rolled oats
- 2 tablespoon whey protein powder( optional)
- 1 tbsp. broken walnut
- 1 tsp. Baking powder
- 1/2 tsp. cinnamon powder
- ¼ cup egg white
- 1 /2 cup low fat plain yogurt
- 1 cup mashed ripe banana
- 1 tbsp. olive oil
Method:
- In a grinder, combine the semolina ( suji), oats, baking powder, protein powder, walnut and cinnamon , mix them with a quick swirl.
- Combine the egg white, yogurt, and banana and blend them in a blender
- In a large bowl combine the dry oat mixture and liquid banana-egg mixture, mix them well until they become like creamy consistency like a cake batter.
- On a lightly greased hot griddle, using moderate heat, drop batter by 1/2 cupful batter and with a spatula, spread each pancake in a round shape.
- Cook until bubbles appear and top are slightly dry, sprinkle olive oil all over on pancake, turn and cook until the other side is golden brown.
Serve hot with dots of butter and garnish with scarped coconut (optional) and dry fruits( optional).

Note: These loaded Pancakes that is well worth the effort! Preparation time is minimal for such a great way to start the day.
If you want you can make some changes such as skip the egg whites, I have use because egg whites are considered as vegetarian food.
Use skim milk instead of milk. I have used yogurt to get probiotic benefit.
Drizzle maple syrup or honey on top to serve to the small kids.
