High Fiber and low fat Desert – Carrot Pudding

Carrots provide an assortment of nutrition which is rich in vitamins and mineral and fiber.

The vitamin A is a valuable antioxidant in carrots which supports vision, bone development and help the body to fight against disease.

Vitamin B support metabolism, energy production.

Vitamin K supports blood clotting and cell growth. Phosphorus and magnesium support heart, muscle and cognitive function.

 

Carrots contain a complex carbohydrate, known as fiber. When you eat a high-fiber food like carrots, the fiber passes through your gastrointestinal tract without being digested and absorbed, combines with water and produce soft, bulky stools that travel easily through your intestines and out of your body. A diet rich in fiber helps avoid constipation. And Helps to loose weight as body has to burn more calorie to digest high fiber food.

Ingredients:

2 cups grated carrot

2 cups low fat evaporated milk

6 tbsp. skimmed Sweetened condensed milk

10 almonds, soaked in hot water, peeled and grated

1/2 tsp. cardamom (elaichi) powder

 

Method:

  • Grate the carrots in food processor or by grater.
  • Combine carrots and milk in a large heavy based pan.
  • Bring to a boil.
  • Lower the heat and cook the carrots, stirring constantly, until all the milk dries up.
  • Add sweetened condensed milk now take extra precaution to avoid the carrrot burn underneath .
  • Saute for a few minutes.
  • Add sugar.
  • Continue to cook and stir the carrot mixture till it dries.
  • Remove from heat when still moist.
  • Stir in the cardamom powder and almonds
  • If not serving immediately, refrigerate carrot halwa and re-heat  just before serving with a little saltless butter and serve when desired.
  1. Note : If you want to skip sugar than add crushed raisins. It is best option for natural sugar and more added fiber.
  2. Try to make this dish with red carrots which is avalable in Indian stores. Red carrots are more nutritious and natural sweetness where as yellow carrots blend in taste comparatively than red carrots.
